Serious' Blackberry Bourbon Tart

Ingredients
Crust:
1 1/2 cups flour
1/4 cup sugar
1/8 tsp salt
10 Tbsp butter
2 egg yolks
1 Tbsp heavy cream
1/4 tsp bourbon
Filling
5 cups fresh blackberries
1 cup sugar
1/2 cup flour
2 Tbsp bourbon
1Tbsp cold butter
Steps
1. In food processor, pulse flout, sugar and salt. Combine thoroughly.
2. Cut butter into small cubes
3. Add butter to food processor
4. Pulse mixture until it becomes consistency of a course meal.
5. Combine egg yolk, cream, and bourbon. Stir well.
6. Add to processor and pulse to combine.
7. Shape dough into disk on foil
8. Dust foil with flour and press dough out to size of tart pan
9. Grease tart pan and ease crust into pan, patting firmly to bottom and up the sides.
10. Extend dough up and over rim to compensate for shrinkage
11. Place in refrigerator for 1 hour
12. Preheat oven to 400 degrees F
13. Line cold tart shell with foil hanging edges over the side.
14. Place rice in foil and bake for 15 minutes
15. Remove from oven and remove foil with rice
16. Bake again for 15 minutes
17. Let cool
18. Top 4 cups blackberries with 1 cup sugar, flour and bourbon
19. Add to cool pie shell
20. Add the rest of the berries on top
21. Sprinkle with butter
22. Add to rimmed baking sheet
23. Bake at 350 degrees F for 30-40 minutes
