Crullers

Ingredients


1/2 cup butter

1 cup water

1 cup all purpose flour

1/2 tsp. salt

4 eggs

Vegetable oil for frying


Glaze

2 cups powdered sugar

2 Tbsp. milk

1/2 tsp vanilla

1/4 tsp lemon extract


Steps


1. Bring butter and water to boil in small pot

2. Stir in flour and salt until combined.

3. Remove and cool 3 minutes

4. Crack eggs in small bowl

5. Mix eggs into warm mixture one by one until batter is smooth

6. Transfer to a piping bag with a large fluted tip

7. Pipe into circles on parchment lined baking sheets

8. Freeze 30 minutes

9. Add oil to large pot, 3 inches

10. Heat oil to 325-350 degrees

11. Mix glaze

12. Drop frozen crullers one by one into hot grease.

13. Fry 1 minute per side or until golden brown

14. Remove to paper towel to drain.

15. Transfer to cooling rack

16. Immediately coat in glaze and let harden
