Homemade Ramen

Ingredients
2 large hard boiled eggs
1 Tbsp. olive oil
1 Tbsp. minced garlic
1 Tbsp. freshly grated ginger
4 cups chicken stock
4 oz. sliced mushrooms
1T Soy Sauce
Baby carrots, steamed
Corn, steamed
1 rotisserie chicken
chopped green onion
Steps
1. Heat olive oil in stock pot
2. Add garlic and ginger
3. Cook about 1-2 minutes
4. Whisk in chicken stock, mushrooms, soy sauce, and 3 cups of water
5. Reduce heat and simmer until mushrooms have softened, about 10 minutes
6. Stir in noodles and cook until loosened, 2-3 minutes
7. Add noodles and broth to bowl.
8. Top with chicken, carrot, corn, egg, and onion.
