Harry's Magic Melting Potatoes

Ingredients


2 1/2 lbs. Yukon gold potatoes

4 tbsp. butter, melted

1 1/2 tsp dried or fresh thyme or rosemary

1 1/2 tsp salt

1/2 tsp garlic powder

1/2 cup chicken stock

1/2 tsp pepper


Steps


1. Preheat oven to 425 degrees F

2. Peel potatoes

3. Cut each potato into as many 1" discs as possible.

4. Place potatoes into a bowl of cold water until all potatoes have been peeled and cut.

5. Pat potatoes dry with paper towels then place in a large mixing bowl

6. Add melted butter, and seasonings then toss to coat evenly

7. Lay potatoes flat in a large baking dish

8. Bake for 30 minutes on the first side, then flip potatoes and cook and additional 15 minutes on the other side.

9. Flip potatoes one more time then add the stock to the bottom of baking dish

10. Bake for an additional 10-15 minutes or until the potatoes are cooked through and golden brown on top.

11. Remove from oven and sprinkle with pepper and transfer to a serving dish.

12. Drizzle the broth over potatoes.

13. Serve while hot.
