Coconut Curry Chicken

Ingredients
2 tbsp. cooking oil
1 1/2 tbsp. curry powder
1/2 cup diced sweet onion
2 tbsp. minced garlic
2-3 boneless, skinless chicken breasts, cut into bite sized pieces
1 (14.oz) can coconut milk
1 (14.50 oz) can stewed diced tomatoes
salt and pepper to taste
Steps
1. Heat oil in a large skillet over medium heat
2. Add curry, onions, and garlic
3. Cook for 3-4 minutes
4. Add chicken, toss to coat
5. Cook 5 minutes until chicken is cooked mostly through
6. Add coconut milk, tomatoes, and sugar
7. Heat to bubbling, reduce and simmer 10 minutes
8. Serve over rice.
