Bubble and Squeak

Ingredients
1 lb. potatoes, cut in quarters
1/2 lb. carrots
4 Tbsp. olive oil
1 tbsp. butter
1/2 lb. cabbage
4 Tbsp. peas
1/2 red onion, sliced
4 eggs
4 oz. ham
Steps
1. Bring a pan of water to a boil
2. Add potatoes, cook for 5 minutes, drain
3. Heat oven to 350 F
4. Heat skillet and add olive oil and butter
5. Add potatoes and carrots
6. Place in oven for 20 minutes
7. Add cabbage and peas, stir well
8. Make 4 wells and crack egg in wells
9. Salt and Pepper
10. Add ham
11. Bake 10 more minutes, until egg is done
12. Serve immediately
